Discovering Culinary Wonders: The Venetian Resort’s Upcoming Food Hall Via Via

The Venetian Resort in Las Vegas is set to unveil a new food hall, named Via Via, in mid-2025, promising an eclectic and inspiring culinary experience that transports visitors to the streets of Venice. This ambitious project aims to amalgamate celebrated dining concepts from major urban centers such as New York and Los Angeles, creating a gastronomic hub that reflects the vibrant culture of Italian street food.

Patrick Nichols, the resort’s President and CEO, envisions Via Via as more than just a dining destination; it will be a neighborhood of flavors where guests can engage in the joy of discovery. Nichols describes it as transforming the resort into a tapestry woven with incredible culinary talent from across the United States, all housed within a setting designed to mimic the enchanting Mediteranean atmosphere.

Via Via is carefully curating a lineup that promises to delight foodies with its diversity. Among the notable establishments to be featured is All’Antico Vinaio, a Tuscan flatbread sandwich shop that has roots in Florence, Italy. This establishment has gained a tremendous following for its authentic takes on Italian street food. The new location seeks to bring that same fervor to Las Vegas.

Los Angeles’ popular Howlin’ Ray’s will also make an appearance, known for its fiery Nashville hot chicken. Guests can expect not just a meal, but an experience steeped in flavor and culinary craftsmanship. Also joining Via Via is Scarr’s Pizza, which has been delighting New Yorkers since 2016, offering thin, crispy slices that are equally Instagram-worthy and delicious.

Another highlight will be B.S. Taqueria, which is under the direction of Chef Ray Garcia—renowned for his innovative takes on classic tacos. One standout item is the chili-rubbed al pastor made of wood-grilled cauliflower, catering to both meat-lovers and plant-based enthusiasts alike.

**Ivan Ramen** will represent contemporary Japanese dining, providing playful izakaya-style plates rich in flavor and creativity. This inclusion highlights the food hall’s commitment to offering a broad spectrum of global flavors.

The culinary experience will not end there; Via Via will introduce the flavors of New Orleans with James Beard Award-nominated chef Mason Hereford, who will bring signature dishes from his celebrated eateries, Turkey and the Wolf and Molly’s Rise and Shine. Expect indulgent offerings such as a double-decker collard green sandwich and unique breakfast items that promise to elevate the midday meal. These unique flavors add yet another layer to the diverse offerings at the food hall, catering to breakfast and lunch.

As the grand opening of Via Via approaches, there is significant excitement surrounding the new food hall at The Venetian Resort. By encapsulating the essence of Venice’s culinary charm and merging it with innovative gastronomic concepts, Via Via is poised to become a must-visit destination for locals and tourists alike. This initiative not only enriches the culinary landscape of Las Vegas but also reinforces the notion that great food is a universal language, capable of bridging cultures and creating unforgettable experiences. With its dynamic offerings and stunning atmosphere, Via Via will likely redefine food exploration in Sin City.
