Three Restaurants Reimagine Cuisine in Tulum
Namron Hospitality has been a leader in not only elevating the culinary scene in Tulum, but also as a loud advocate for sustainable growth, speaking in favor of local & small-batch production. In 2024, Namron’s most refined dining expression, NÜ at La Valise Tulum, became one of the first restaurants ever in Mexico to be recognized by the globally respected Michelin Guide, further cementing the brand as a pioneer in elevating Mexican cuisine on the international landscape.
In a demonstration of its commitment to continued evolution and unrelenting innovation, NÜ is excited to reintroduce itself with a reimagined culinary ecosystem and accompanying tasting menu rooted in Mexico: in its ingredients, fire, markets, and memory. Every dish has been carefully crafted with intention, inspired by the team behind the food itself, each course accompanied by letters that explain the backstory and intention behind each bite. Their histories, memories, and hearts translate into culinary masterpieces, cooked over an open flame, inviting guests to rediscover the magic that put this restaurant on the global map.
Namron is also proudly introducing two new additional concepts within the destination at two of La Valise’s fellow award-winning properties. Bringing together contemporary Mexican cuisine and Sicilian technique, Climo is bringing a slice of coastal Italy to the beaches of Tulum, with handmade pastas, wood-fired pizzas, and fresh seafood that celebrates the best of both countries at Encantada. At XELA, Izakaya brings guests an intimate, spirit-forward dining concept inspired by the Japanese tradition of gathering, where food and drink are secondary only to the connection they foster, with a twist of Namron’s signature Mexican coastal influence.
New Concepts in Mexico City
Sitting in the Torre Virreyes de Chapultepec skyscraper in the Lomas Virreyes neighborhood of Mexico City, Hotel Alexander, which is one of the newest additions to the Namron collection, is reintroducing its signature dining concept as the Alexander Bar. Formerly known as the Caviar Bar, the original restaurant rose in popularity as Mexico’s only true caviar bar. This status remains true, preserving its position as the city’s premier caviar tasting experience, while also elevating the restaurant into a comprehensive cocktail and social bar where sophistication meets intentional craft with a reimagined food and beverage menu led by Chef Ana Sophia Serrano.
The grand opening of El Cortés, set in a refurbished Presidential Palace in one of the city’s most culturally rich neighborhoods, Roma Norte, has become widely regarded as one of the most anticipated debuts of 2026. Ahead of the hotel’s official inauguration, its signature cozy, contemporary European restaurant, Lotti, the first solo project of Swiss Chef Luc Liebster, is now open for lunch and dinner seatings, serving signature dishes that include chicken Cordon Bleu, braised lamb, and Wagyu filet.
