Jumeirah Capri Palace reopens a-Ma-Re Capri with an evolved pizza offering in collaboration with Pizzaingrammi – the renowned pizza concept with locations in Pozzuoli, Pomigliano, Quarto and Naples. Introducing a new culinary direction for the seaside restaurant, the collaboration brings a contemporary interpretation of one of Italy’s favoured gastronomic traditions.
Recognised for its distinctive approach to pizza-making, Pizzaingrammi combines family tradition and contemporary research. With roots tracing back to the historic Puntonave (1985), the concept has, since 2018, developed a philosophy centred around lightness, craftmanship and conviviality. Through highly hydrated doughs, extended natural fermentation and carefully selected ingredients, each creation is designed to elevate traditional techniques while preserving authenticity.
This vision comes to life in the new Pizzaingrammi creations developed for a-Ma-Re Capri. Among the highlights is “Grotta Azzurra”, inspired by Capri’s most photographed symbol, the Blue Grotto. The double-cooked pizza, first fried and then baked, combines red prawn tartare, Apulian buffalo stracciata, mullet bottarga, lemon zest and crystallised basil in an expression of the island’s coastal flavours.
The culinary offering at a-Ma-Re Capri continues under the leadership of Resident Chef Nicola Giovanni Maiello, guided by Executive Chef Salvatore Elefante. Together, they bring a vision that balances regional traditions with technical precision and contemporary creativity, celebrating the richness and authenticity of Mediterranean cuisine.
Alongside the new pizza offering, a-Ma-Re Capri introduces unique seasonal culinary experiences inspired by the spirit and theatricality of Neapolitan dining traditions. These include a reinterpretation of the classic “‘o per e ‘o muss” ritual, served alongside a Seafood Salad with yellow lupins, paying tribute to the most vibrant flavours and convivial culture of Southern Italy.
New additions to the pasta selection include “Mafalda with tomato passata, ricotta and Parmigiano”, a dish that invites guests to complete the final preparation tableside, transforming the service ritual into an immersive, convivial and distinctly Italian dining experience rooted in the art of sharing.
